Mini Peach Galette with Rosemary

On our instagram page, we created a section where we let our followers choose between 2 options in what we are going to cook, bake or fry in the next coming days. After long debate we came up with a name for it: “Foodroulette”! Ever since we started we had several good reactions from our followers and we keep on doing this as a weekly treat for them, but mostly ourselves!

This particular time we gave people the choice between a cherry or a peach galette, in the end the beautiful peaches won and we made this photogenic and supertasty galette! A treat for your family members or friends which they will love. Of course we can not go without sharing this delicious recipe with you, so here it is;

Mini Peach Galette with Rosemary

Prep Time: 30 minutes Cooking Time: 40 minutes Total Time: 70 minutes


  • 50 gr butter
  • 75 gr flour
  • 1 tsp sugar
  • 2 tbsp water (with ice)
  • Peel from 1 small orange
  • 1/4 tsp almond extract
  • For the filling:
  • 3 ripe peaches
  • 3 tbsp sugar
  • 1/2 tsp vanilla essence
  • 1/2 tsp chopped rosemary
  • + some almond flakes to decorate



Start by chopping the butter and keeping it in the freezer for about 30 min. When nice and cold, add to a big bowl and top with flour and sugar.


Using you fingers or two forks crumble the butter until you obtain small crumbs.


Add the cold water one tbsp at a time and mix until the dough starts sticking together. Gently press into a ball until you obtain a smooth surface, and flatten using your palm. Wrap in plastic foil and refrigerate for 1 hour min.


Preheat your oven at 200 C.


Peel the peaches and slice thinly. Mix with sugar, vanilla and rosemary and let them sit until you are ready to bake.


Take the dough out of the fridge and give it 5 minutes to relax. Flour your surface and your roller and divide the dough in half, forming 2 smaller balls.


Roll the dough in a thin sheet, place the peaches slices in the center and pinch and fold the dough around the fruit.


Reserve the juices from the peaches and lightly brush the edges with this mixture. Sprinkle some sugar and almond flakes on the edges and bake for 40 minutes.


Let it cool off on a rack and serve with ice cream and a glass of bubbles. So refreshing and ... peachy!
