Vegan Pear Crumble with Walnuts

It is Saturday, so this means : no alarm, no workout and a new recipe! Oh and story time, of course, check the blog here if you are curious to read about my weekend, tea and a bit of catfulness! Today we will be making a super simple, healthy pear dessert. And the best part about it?! You can so easily make it vegan. No fancy ingredients, no expensive groceries list, and no time wasted in the kitchen.

It’s ok to drool, no one is judging you!

As you know, it is autumn here in the Netherlands and this means a few things: it rains a lot, my cats got fluffier and the markets are full of great produce! I did not intend to post this recipe today, but I came across the most beautiful ugly fruits and I just had to have them. You know how supermarkets show us only the pretty shiny ones? Well, the markets here are doing exactly the opposite, there is no fruit discrimination going on and I love it! It is that time of the year when pears are just sublime, perfectly sweet and juicy, with a bit if sourness in the peel, absolutely great for cobbler. But I have been trying to stay away from butter and sugar for a while now, because my stomach has been revolting after spending the whole summer trying out cocktails and cakes, so I was determined to come up with a healthy pear dessert , using as little ingredients as possible and spending only a few minutes in the kitchen.

And my dears (or shall I say my peers? ha! ha! I just cannot get enough of my bad jokes), let me tell you, that by mixing a few baking techniques (fancy word for making a crumble with oats) I managed to achieve even more than that! Vegan Pear Crumble with Walnuts

Prep Time: 10 minutes Cooking Time: 30 minutes Total Time: 40 minutes


  • 2 big soft pears (400 gr after cutting and peeling)
  • 10 ml maple syrup
  • 1/4 tsp cinnamon
  • a sprinkle of nutmeg
  • a sprinkle of salt
  • 1/2 tsp cornstarch
  • 1/4 cup water
  • 50 gr rolled oats
  • 20 gr whole wheat (wholemeal) flour
  • 15 gr vegan butter
  • 10 ml maple syrup
  • 20 gr chopped walnuts



Preheat the oven at 180 C


Peel and dice your pears in small cubes and add to a pan


Cover with spices, water, maple syrup, salt and cornstarch and give it a gentle stir


Cook on the stove for about 5 minutes, until the liquid becomes thick like a syrup


Divide the mixture in 2 medium ramekins or in a small baking tray and start making the crumble


Add all the ingredients to a big bowl and mix for a minute using your hands until the mixture begins to clump together


Top the ramekins with the crumble and bake* in the middle of the oven for 30 minutes


Let it rest for a few minutes and serve with vegan frozen yogurt or ice cream or just like I did, with a cup of green tea infused with mandarins

*put the ramekins on a baking sheet with baking paper, so the juices and syrup don't transform your oven into a hot, sticky mess
